sherpas wissen ganz genau wo es lang geht, nicht nur beim bergsteigen im himalaya, sondern auch wenn es um lokale esskultur geht! es ist noch gar nicht lange her, dass die NEW YORK TIMES in einem ihrer artikel den begriff der “food sherpas” prägte und einen weltweiten trend zum thema machte. kulinarische touren jenseits der ausgetretenen touristen-pfade und das erleben authentischer, lokaler produkte und küche, das ist es, was eine food sherpa tour bietet. die leidenschaft für die kulinarik und die esskultur einer region treibt diese bewegung an. “locals” teilen ihre persönlichen empfehlungen für regionale köstlichkeiten und auch ihre lieblings-restaurants auf einer food tour. als ich im oktober ein paar tage in MÁLAGA verbrachte, durfte ich eigene erfahrungen mit den SPAIN FOOD SHERPAS machen. ich sag nur… köstlichst!

sherpas just know where to go. not only when you’re off to the himalaya, but also when it comes to know about local food cultures. not so long ago the new NEW YORK TIMES coined the term “food sherpas” by picking a worldwide food trend for one of theit articles. it’a all about culinary tours of the beaten track of tourism and the personal experience of authentic food and local products. food sherpas are driven by their passion for the own food culture and they share their genuine knowledge and tips with the people joining their guided tours. when i travelled to MÁLAGA in october, i got the chance to experience a food tour guided by the  SPAIN FOOD SHERPAS… awesome!

wir treffen uns mit simone von den spain food sherpas am späten vormittag in der city von málaga. am nachmittag sollten wir noch lernen, wie man eine authentische, andalusische PAELLA kocht, aber zuvor muss natürlich erst einmal eingekauft werden! simone führt uns ganz ziestrebig durch die straßen der altstadt und wir stoppen hier und dort in typischen lebensmittel-läden, um ein paar lokale köstlichkeiten zu besorgen oder auch zu probieren. ein frisches brot muss mit! ein stück BACALAO, also getrockneten und stark gesalzenen stockfisch, hat sie schon am vortag für uns mitgenommen und für ein unfassbar leckeres, wie simples TAPASgericht vorbereitet, aber dazu später mehr.
we meet up with simone from the spain food sherpas at forenoon in the heart of the city of málaga. later on we will learn to cook authentic andalusian PAELLA, but first we have to run some grocery errands! simone shows us around the streets of the historic center looking for typical grocer’s shops with lokal food products. we stop by some places to buy ingredients for our later cooking class and for some small tastings. we get some fresh bread, too! simone got a piece of BACALAO, which is air dried and strongly salted stockfish. she already prepared the fish for some amazing yummy, yet very simple TAPASdish we’re going to try later.

zuerst schlenderten wir über den MERCADO ATARAZANAS. das historische gebäude mit eindeutig orientalischen architektur-wurzeln ist schon von außen sehr imposant. im inneren dann verschlägt es einem vor lauter kulinatischen gaumenfreuden die sprache. ich liebe es auf lokalen märkten zu stöbern {so sehr, dass märkte mit frischen lebensmitteln hier in meinem blog sogar eine ganz eigene rubrik haben!}. auf dem atarazanas markt der malagueños erwarten einen die köstlichsten obst- und gemüsesorten, lokale delikatessen, unzählige käsesorten, traditionell luftgetrocknete schinken JAMÓN IBÉRICO und natürlich fangfrischen fisch, schließlich sind wir hier am meer! hier könnte ich stunden verbringen… schauen, schnuppern und probieren. ich bedauere es, dass ich vieles nicht einkaufen und mitnehmen kann. umso mehr freue ich mich, dass uns später noch ein spain food sherpas kochkurs erwartet, bei dem auch als nachtisch CHIRIMOYA serviert werden wird. diese komische frucht habe ich schon mal gesehen, aber noch nie probiert. ich bin sehr gespannt!

but first we stroll the MERCADO ATARAZANAS. the arabic roots of the beautiful historic building are obvious. it’s impressing outside and inside as well. you know i love local farmers markets! {i even dedicated a whole blog category to farmers markets i visited!}. i’m overwhelmed by the variety of fresh fruit and vegetable, countless sorts of cheese, the traditional JAMÓN IBÉRICO and of course all the freshly cought fish. i could spend ours at this marvelous place just looking, snuffling and tasting stuff. i kinda regret that i can’t buy most the things to bring them home. all the more i’m looking forward to join the spain food sherpas cooking class later. we are going to have CHIRIMOYA as dessert. i’ve seen this whimsical looking fruit before, but i never tried one. can’t wait!

als nächstes führt uns unser weg an der taparia LA RECOVA vorbei. dort bekommen wir hausgemachte, delikate, in salzlake eingelegte grüne oliven, die wir noch als vorspeise brauchen. ich bedauere ein bisschen, dass wir in dem urigen restaurant nicht bleiben, die käse-cremes und tapas auf den tischen sehen fantastisch aus! das la recova ist übrigens ein stop auf der MÁLAGA TAPAS TOUR, die die spain food sherpas ebenfalls anbieten. ich nehme mir vor, die tapas tour auf jeden fall irgendwann mitzumachen, um noch mehr echte restaurant-perlen wie diese zu entdecken. heute müssen wir selbst kochen und wir machen uns auf den weg zum LABORATORIO de SABORES, wo bereits ein herd samt köchin auf uns wartet. auf dem kochplan stehen nicht nur die bekannte paella, sondern auch ARROZ NEGRO und eine erfrischende GAZPACHO {schließlich herrschen hier mitte oktober noch sommerliche temperaturen!}
next stop on our food tour is the taparia LA RECOVA. we go there to get some of their homemade, pickled green olives. they will be part of our starter dishes later. once again i regret that we can’t stay longer at this lovely and rustic restaurant. the cheese dips and tapas on the tables look amazing! the la recova is part of the MÁLAGA TAPAS TOUR guided by the spain food sherpas by the way. i’ll put it on my list to come back and join a walk like that to explore more malagaese restaurants! today we’re going to cook ourselves, so we start off to the LABORATORIO de SABORES, where a professional cook is already waiting for us. on our cooking plan for the afternoon there is a traditional pealla, ARROZ NEGRO and a refreshing GAZPACHO soup {after all in the middle of october it’s still summer with high temperatures here!}.

köstlich ist tatsächlich alles, was wir an diesem nachmittag unter fachkundiger anleitung zubereiten. das gemeinsame kochen macht richtig viel spaß! am meisten begeistert mich jedoch der bacalao! der getrocknete stockfisch wurde, in ganz feine, kleine streifen geschnitten, über nacht in nativem olivenöl eingelegt, damit er weich wird und der starke salzgeschmack etwas milder. jetzt wird ein stück frisches, knuspriges brot mit frischgespresstem orangensaft und dem so aromatisierten olivenöl beträufelt und mit einem stückchen des bacalao darauf zum absoluten hochgenuss. so simpel und so unglaublich lecker! {habt ihr das schon mal probiert?} ich kann mich kaum bremsen und esse mich allein damit schon fast satt.
really everything we made according to the skillfull instructions of the chef turns out to be delicious. and cooking together in a group is a lot of fun! but as simple as it is, i do love the bacalao the most! the dried stockfish has been chopped into very fine slices and marinated in olive oil over night to soften it and milden the strong salty taste. we take slices of fresh and crisp bread and drizzle some freshly squeezed orange juice and the flavored olive oil over it. then we add one or more slices of the bacalo on top. the taste is absolutely devine! {did you ever try it?}. i can hardly stop eating this amazing simple dish and i’m almost full before we even started with the starter and the main courses.

doch dann ist der duft der anderen speisen doch zu verführerisch. die köstliche gazpacho, paella und arroz negro gehen auch noch rein… und auch die chirimoya als dessert. und wieder einmal offenbahrt sich, dass die einfachsten dinge oft die delikatesten sind. bleibt mir weg mit tiramisu, mousse au chocolat oder crème brûlée! so eine frische frucht kann doch nichts toppen! die chirimoya schmeckt wie eine mischung aus cremiger banane, birne und honigmelone und wird mich von nun an sicherlich für immer an MÁLAGA erinnern. danke, ihr SPAIN FOOD SHERPAS leute, für diese ganz besondere erfahrung. ich kann es kaum erwarten, das nächste mal noch mehr malagenische spezialitäten zu entdecken!
but when the other food starts to give off their yummy smells, i feel a little hungry again. the luscious gazpacho, paella and arroz negro still find some place in my belly… and even the chirimoya dessert. again it’s clear to me that sometimes the simplest food can be the best. forget about  tiramisu, mousse au chocolat or crème brûlée! nothing can beat this fresh fruit! the chirimoya has an amazing flavor like a mixture of creamy banana, pear and honeydew melon. i think, it will forever remind me of that trip to MÁLAGA. thank you guys from SPAIN FOOD SHERPAS for giving me this very special experience. i can’t wait to come back and join you again to explore more malaganian food !
